Welcome to The Fort Cuisine Of India
The Story of The Fort
In 2001, Wahid Noori arrived in the United States as a refugee with nothing but determination. Instead of relying on outside assistance, he chose to build a future through hard work and resilience.
By 2002, he found his first job at Bombay House, then owned by Harpall Paul Singh (now the owner of Mumbai House Indian Cuisine). Wahid began at the very bottom as a busboy—cleaning tables, wiping down banquets, and scrubbing bathrooms. Once his own duties were complete, he stepped into the kitchen to learn, grow, and master the art of Indian cuisine.
With mentorship and guidance, Wahid moved from cleaning tables to cooking dishes, building his skills one step at a time. His perseverance and dedication laid the foundation for what was to come.
Today, after decades of sacrifice and commitment, Wahid is the proud owner of The Fort, with thriving locations in both Layton and Ogden. Unlike corporate chains, The Fort is family-owned and community-driven—with no outside owners, investors, or silent partners.
✨ At The Fort, every dish tells a story. It’s the story of resilience, opportunity, and a family that built something extraordinary with the support of its community.
Welcome to The Fort—where hard work meets flavor.
